Poached salmon with crème fraiche dill and limes resting on a
bed of mixed leaves served with lemon oil, dill oil and granary
croute
Main Course
Rump of lamb marinated in red wine and rosemary
sautéed and oven baked finished with a Cumberland on a
bed of crushed swede flavored with butter and cracked black pepper
Char grilled Scotch sirloin finished in shiraz & partnered with a sweet
potato wedge, field mushrooms and charred tomato
Supreme of Scottish salmon thinly draped with a dill mayonnaise
topped with an herb infused crumb oven baked on crushed
potatoes with capers
Char grilled Mediterranean vegetables towered with pesto on a bed of
spinach and pine nut risotto
Chicken breast oven roasted with chestnuts, wild mushrooms and
lemon thyme served with a roasted jus.
